This recipe sounds pretty good (assuming the alcohol is mostly cooked off). I've never seen yeast called for in a pancake recipe before. I would think it might make them fluffier, but the pancakes in the accompanying picture don't appear to be especially fluffy. And what the hell is "vegan butter"? I assume they just mean margarine, but maybe it's something else. And I'm sure the pancakes don't necessarily need to be vegan if they're being served with whipped cream.
Anyway, I also like the idea of having three different flavors in three different parts of the dish (pancakes, syrup, whipped cream). There are a lot of things that could be done with this, and not only with this dish. Hmm. I may have to do some experimental cooking this weekend.
