Lime Sugar Cookies
I had some lime sugar cookies when I was at Fenway the last time. I wanted to try them for myself, so I took the Betty Crocker sugar cookie recipe and added the juice from one lime. The result: I can't really tell there's any lime in there. So, next time, I'm going for 2 limes, possibly with a little lime zest.

It would also be nice if I could get the cookies soft and chewy like the ones I had at Fenway. Unfortunately, I'd probably have to add all sorts of chemicals to get them that way.

I'd add more zest than juice, actually. The zest seems to carry more flavor than the juice, at least in terms of baked goods, and I'd worry about the acid in the juice changing the consistency of the end product if you add too much.

I seem to remember a technique where you pulse citrus zest with sugar in a food processor to release the oils. You could try that, and maybe roll the cookies in some of that sugar before you bake them.

Thanks for the tip. Hmm, maybe a little zest in the dough itself, and then a little more pulsed with sugar sprinkled on top. And maybe no juice at all.

(This is in my memories. We'll see if I remember to look here the next time I make cookies.)

Try baking them a slightly shorter amount of time. (Varying the amount - by not much, maybe a tablespoon or two - of the fat used, and the flour, may make a difference, too; type of fat also affects it.)
