The most interesting thing I learned is that the rice is actually supposed to be warm. The point is that the heat of the rice and the heat of your mouth will combine to make the cold fish melt in your mouth. I also learned that a fresh wasabi root takes about 3 years to grow and sells for around $40. There are other interesting tidbits in there, so it's worth checking out.
