Dinner - Queue — LiveJournal
I think I'm going to try to stick with vegetables for dinner tonight. No carbs, no suagrs. Just veggies. Anyone have suggestions for what might be good and interesting?

I'm sure of the cooks out there will have better ideas, but here are some yummy thoughts: carrots or green beans with margarine; sauteed summer squash w/onions, garlic, basil and tomatoes (or w/o the 'matoes); pintos or black beans w/onions and garlic; mushrooms w/onios and garlic - oh, or in w/the summer squash. I'd suggest one canned bean kind of thing along with some lighter stuff, else it might not be so filling.
i would probably do something with eggplant -- maybe try out a baingan bartha recipe or something.
it might also be good to have something with legumes -- chickpeas, lentils, red or black or white beans, etc. protein's important.
if you like Indian food, i'd definitely say that's the way to go. but if you don't, your options are more limited...

Maybe a veggie stir-fry, perhaps with tofu.
Baked winter squashes are nice, too, and spaghetti squash can be used just like spaghetti once it's cooked.
If it doesn't feel too chilly, perhaps a big salad (with or without hard-boiled eggs; I wasn't sure if you were avoiding proteins for the meal or not).
Oh, vegetable soup! Whatever kinds of veggies you want :-). Though that would take longer to cook than a stir-fry.
A great big steaming bowl of delicious bok choy?
When I'm in a veggies-only mood I usually just nuke a bowl of frozen mixed, but hey. I'm livin' la vida loca.
