So, I think the next jam is going to be mango and hot pepper. Not sure yet what kind of hot peppers. I may try a little taste test of a bunch of kinds, or I may just grab some that look okay. Mangos, peppers, lime juice for the acid, sugar, and probably some pectin (although some recipes I saw for mango jam didn't call for pectin). So, that's it, should be fine for almost everyone I know to eat. And, yes, I'm planning on trying to make it in my kosher pot on my kosher burner.
